- 1 large cauliflower
- 4 tablespoons pesto (see Pesto recipe)
- 1 tablespoon garlic powder
- 1 teaspoon paprika
- 4 tablespoons olive oil
- Salt and pepper to taste
I have so many vegetarians in my life, I am always looking for a way to make sure they are eating something similar to what the rest of the table is eating. I absolutely love this recipe because it really is like serving a vegetarian steak, it is hardy and filling. Try it out I guarantee it will be a hit.
preparationSlice the cauliflower into large slices or the entire length. You will be able to get 4 good slices out of it. Place each slice on a large piece of aluminium foil. Spoon the pesto on each piece and rub it all over the slice. Add the garlic powder and paprika. Drizzle olive oil, salt and pepper.
Fold the aluminium foil and seal all the edges to make a little package. Place on the BBQ on medium high heat for 20-25 minutes or until it is fork tender.
