STRING BEANS AND CRISPY PROSCIUTTO

If you thought prosciutto was only for sandwiches think again! Whenever I have prosciutto sliced and its been in my fridge a couple of days I love to make this recipe. And if your wondering where else crispy proscitutto can be used just replace it wherever bacon is usually used.

ingredients

  • 500g green or yellow string beans
  • 3 tablespoons olive oil
  • 8 slices prosciutto sliced thinly
  • 2 french shallots minced
  • 2 cloves of garlic minced
  • 1/4 cup parsley chopped

preparation

Bring a large pot of salted water to a boil. Put in the string beans and blanch them for 2 to 3 minutes. Remove and place in a bowl of ice water to stop the cooking process.

In a skillet on medium high heat warm the olive oil. Add in he prosciutto and cook until crisp. Remove and reserve. Add in the shallots and the garlic, cook until the onions are translucent and the garlic is golden. Add in the string beans and the parsley and cook until the beans are warmed. In a bowl put in the string beans and top with the crispy prosciutto.

This dish can be served warm or cold.
