ASPARAGUS LOVE ROLLS
During my high school years I would come home to my grandmothers house after school. She decided to make me a snack that she though I would enjoy, and it ended up being her go to snack for weeks after that! Imagine crispy prosciutto flavouring asparagus sprigs...yum!
- 1 bunch asparagus
- 4 tablespoons olive oil
- 2 tablespoons chives chopped
- 1 teaspoon lemon zest
- 1 teaspoon course black pepper
- 1/4 cup parmigiano reggiano
- 10 slices prosciutto
Preheat your oven to 375 degrees
In a bowl toss together the asparagus, olive oil, chives, lemon zest, parmigiano reggiano and black pepper. Divide the mixture into 5 bunches. Line 2 slices of prosciutto one on top of each other, place the bunch of asparagus on top and wrap.
Line a baking sheet with parchment paper. Place the asparagus on the baking sheet and bake for 15-20 minutes or until the asparagus is cooked.
