GOLDEN CHEESE STRAWS
Entertaining can be tricky when you are not prepared. This recipe for cheese straws is perfect for that unexpected guest, not only do they take a couple of minutes to cook fresh but they make the house smell like you have been cooking all day!
ingredients
- 1 cup of all purpose flour
- 1/2 teaspoon of sea salt
- 1/4 teaspoon of ground cayenne
- 4 tablespoons of non salted butter, very cold
- 1/2 cup sharp cheddar, or parmigiano reggiano grated
- 1/4 cup of finely chopped chives or green onions
- 1 teaspoon lemon juice or white vinegar
- 1/3 cup icy water
preparation
In a bowl, combine flour, salt and cayenne. Add the butter cut into pieces. Mix together with your hands or use a mixer until the butter is as small as crumbs. Add the cheese and chives and stir together. Combine the lemon juice or the vinegar to the water. Then add the water to the dough and mix lightly until the dough comes together. Wrap the dough with plastic wrap and refrigerate for about one hour. Preheat the oven to 200 C / 400 F. Roll the dough out then cut into one inch strips. Twist the dough place on a baking sheet lined with parchment paper. Bake in the oven until the cheese straws are golden or 6 to 8 minutes and then allow them to cool 10 minutes before serving.
These cheese straws can be kept one week in an air tight container at room temperature. Makes about 2 dozen.
