LAVENDER SALMON
I love when people say they are going to cook for me...it truly is a treat! And speaking of treats I can technically have a whole category dedicated to Gianfranco's Aunt B's creations. Every time I go over I learn something new, this recipe is just one of the many. The one thing I love about her food is how it is classic yet catered to the modern day palate. Always on point and full of flavour, thank you Aunt B for this recipe!
ingredients
- 1 whole salmon filet; deboned, skin off
- 1 tbsp lavender buds (they look like seeds)
- 1 lemon juiced
- 3 tbsp honey
- 1/4 cup extra virgin olive oil
- Salt & ground pepper to taste
- 3 fresh sprigs of lavender
preparation
Pre-heat your oven to 375 degrees.
When you bring home the salmon open up the package and run your finger along the filet to make sure that it has been properly cleaned, in other words that there are no bones left in it and there are no fish scales.
Place it on a greased baking sheet of your choice. Reserve in the fridge.
In a bowl combine the olive oil, honey, and lemon juice. Pour over the salmon filet. Then sprinkle the salt, pepper and lavender buds. Place into the oven and cook for 15-20 minutes until the edges are crispy and the fish flakes with the touch of a fork.
Bring to the table whole garnished with fresh lavender sprigs and lemon slices. It truly is a pretty piece of salmon!
