ZESTY HALIBUT

If you ask me meat or fish...my answer almost all the time is fish. I love how light it is and I especially love the texture. This recipe was a quick week night dinner that I needed to make before going to hot yoga. It was perfect! Try it on a night when your looking for a light yet flavourful dish.

ingredients

  • 6 halibut filets, deboned, skinless
  • 1 lime zested and juiced
  • 1 lemon zested and juiced
  • Salt & Pepper to taste
  • 1/2 cup basil thinly sliced
  • 2 tbsp butter

preparation

When you bring home the halibut run your finger along the filet to make sure that it has been properly cleaned, in other words that there are no bones left in it and there are no fish scales or skin.

Season the fish with the lemon and lime zest. Season with salt and pepper.

In a skillet on medium high heat melt the butter, add in the halibut and cook 3 minutes per side. Once you turn the fish add in the juice of the lime and the lemon directly on the filets. Garnish with the basil.

Serve this fish on a bed of salad with a side of kale it makes for a "superfood" lunch or dinner.
