GRILLED CORN

New York is home to some of my favourite restaurants in the world! One of them being La Esquina! They serve up some of the most delicious grilled corn on a stick, its actually worth getting my teeth full of corn kernels! Try this recipe on the BBQ in the summer months or in the oven during the colder ones. Either way it takes corn to a whole other level!

ingredients

  • 6 sprigs of corn on the cob, cleaned
  • 2 tsp paprika
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1/2 cup chopped parsley
  • 1/2 cup parmesan cheese
  • 1/4 cup olive oil or melted butter

preparation

Boil the corn on the cob in salted water for 5 minutes. Strain and continue the cooking on either the BBQ or in the oven for an additional 5 minutes or until the kernels are charred. Place the corn in a bowl and sprinkle on the paprika, salt, pepper, parsley, parmesan cheese and olive oil OR butter. Toss the corn until it is completely covered with all the seasonings.

I like to serve the corn with fresh lime wedges for a splash of citrus, and its fun when they are skewered on a stick. If you're using a stick be very careful it has to be a heavy duty one, able to hold the weight of the corn.
