FRESH PASTA DOUGH
For those of you who think pasta making is not for you I recommend you try this recipe before deciding! All it takes is a couple of simple ingredients, a digital scale and a manual pasta machine...I guarantee you have never eaten fresh pasta like this before!
ingredients
- 100g all purpose flour
- 200g of 00 flour
- 1 whole egg
- 2 egg yolks
- 1 teaspoon of salt
- 75ml of warm water
- 5ml of olive oil
preparation
Place a bowl on your scale and weigh your flour.
Make a fountain with your flour and in the center crack the eggs, and add the salt, oil. Put your scale back to 0 and weight the water.In a circular motion mix the liquid in the center and slowly incorporate the flour until it turns into a ball.
Knead the dough until it has a homogonous consistency or for about 3 to 5 minutes. Do not overmix.
Wrap it in plastic wrap and refrigerate 30 minutes before handling.
**Farina 00 can be found right at your specialty grocery store in the flour section. It truly makes a great pasta dough because it is the most refined grade with the least amount of bran. If you cannot find this you can simply substitue with all purpose flour.
