POTATOES SFATTE
Potatoes are my favourite vegetable...and cheat food. I am always looking for a new way to make them, this is one of my favourite recipes especially in the summer months when I am looking for an alternative to mayonnaise as a condiment. "S'fatte in italian simply means falling apart and its when the potatoes do this that you have the most delicious and creamy potato salad ever! I love this dish warm and love it even more cold!
ingredients
- 2 lbs marble potatoes halved (the pretty coloured ones; white, red and purple)
- 3 cloves of garlic grated
- 1 cup parsley chopped
- 1 sprig thym chopped
- 4 green onions chopped
- 1 lemon zested
- 3/4 cup of olive oil (this is a perfect place to use a good quality one)
- Salt & pepper to taste
preparation
Fill a large pot with cold salted water. Put the potatoes into the pot. Put on high heat and place a lid on top. Once the potatoes come to a boil remove the lid and calculate 10 minutes. Poke a knife into the potatoes to make sure they are cooked through. I like to test a couple because they are usually different sizes and tend to have different cooking times. Strain and place into a large bowl.
While the potatoes are still hot add in the olive oil, garlic, parsley, thym, onions and lemon. Pour in the olive oil, salt and pepper and stir very well with a wooden spoon. I like when the potatoes fall apart and the natural starches in the potatoes create a creamy texture.
